  The Jerky Buccaneer: A Brief History of Pirates and Smoked Meat
  
Viande Boucanée...
 Originating in the pirate infested region of Hispaniola between the 17th and 18th centuries...the tradition of curing and preserving meats with spices became an essential and popular means of sustenance for inland raiders that set up hideouts on the uninhabited islands of the Carribean. Referred to in French as "Boucanées", a Boucan or "Buccan" was the name of the small drying huts used to slow cure meat, normally from wild boar left on the islands. This form of preservation was quickly adopted by the Pirates operating in the area, as it was perfect for lasting long periods at sea without spoiling, providing important nourishment and subsistence during their chase for gold and fortunes.
  
 In fact, the common alternate name for pirates... "Buccaneer" gets it's origin from a corruption of the French term Boucanée!
  
(Another fun fact...while the French called it Boucan...the Spanish referred to it as "Barbacoa"...which is where we get the name Barbecue!)
  
 This great way to preserve important sustenance for survival and energy caught on, and was eventually adopted by settlers and adventurers who explored and set up in the North American Wild Frontier. At some point, "jerky" became the general name for any of a variety of meats, dried and preserved with this spice and seasoning process.
  
 Made from cuts of fresh beef, our original recipe Authetic Wild West Cowboy Beef Jerky is slow marinated for one week in Kentucky Bourbon Whisky, real honey, dark terryiaki and a dash of ground black pepper...then dried and preserved naturally for a deep and tangy-sweet flavor.
